Mediterranean Pasta Salad


1) 1/4 cup ( 1 ounce) grated fresh Parmesan cheese

2) 1/4 cup red wine vinegar

3) 1/4 cup olive tapenade

4)1 tablespoon extra-virgin olive oil

5) 1 teaspoon Dijon mustard

6) 1/4 teaspoon black pepper

7)8 ounces multigrain farfalle(bow tie pasta)

8) 1 cup chopped zucchini about 1 medium size

9) 1/2 cup julienne-cut sun dried tomatoes,packed without oil

10) Basil leaves(( optional)


Place first 6 ingredients  in a blender:process until smooth. Cover and refrigerate vinaigrette.

Cook pasta according to package directions,omitting salt and fat.Add zucchini to boiling water 1 to 2 minutes before pasta is done.Drain,Rinse pasta mixture under cold water:drain and place in a large bowl.Add tomatoes:drizzle vinaigrette.tossing to coat.Garnish with basil,if desired.and serve immediately.(Serving size 1 cup)
