Spicy Chicken with Pickled Veggies

Prep Time: 15 minutes
Total Time: 40 minutes

1 medium carrot,thinly sliced
5 radishes,trimmed and sliced
4 Tbsp seasoned rice vinegar
1 lb thin-sliced boneless,skinless chicken breasts
1 Tbsp olive oil
2 cloves garlic,minced
1/4 c reduced-fat mayonnaise
1/2 tsp Sriracha(hot sauce)
4 mini French uettes,split
1/4 c fresh cilantro leaves
1/4 c freh mint leaves

1) Toss carrot and radishes with 2 Tbsp of the vinegar in bowl.Let stand,stirring occasionally,15 minutes to pickle.
2) Combine chicken,oil,garlic,and remaining 2 Tbsp vinegar in zip-top bag,massaging to coat.Let stand 15 minutes.Mix mayo and Sriracha in bowl.
3) Heat broiler,Remove chicken from marinade(discard marinade) and put on baking sheet. Broil 6″ from heat,turning,until golden and cooked through,8 minutes.Let stand 5 minutes befre slicing.
4) Sandwich chicke,spicy mayo,pickled veggies,and herbs in baguettes.
